Step‑by‑Step Instructions
  1. In a large bowl, combine the beef stew meat with Worcestershire sauce, dried Italian seasoning, smoked paprika, salt, and black pepper. Toss until the beef is coated. Marinate for about 15 minutes.
  2. Place the halved baby potatoes in the bottom of the slow cooker. Drizzle with half the melted butter and olive oil, then sprinkle minced garlic. Toss gently to coat the potatoes.
  3. Layer the seasoned beef on top of the potatoes in the slow cooker. Drizzle remaining melted butter and olive oil over the beef.
  4. Cover and cook on low for 6-7 hours, or on high for 3-4 hours until the beef is fork-tender and potatoes are creamy.
  5. After cooking, stir the mixture gently and garnish with chopped fresh parsley before serving.
