  • 1 cup Lettuce Fresh, seasonal varieties recommended
  • 1 medium Tomato Sliced
  • 8 ounces Camembert Brie can be used as a substitute
For the Garnish
  • 1 cup Cranberries Fresh or dried
  • 1 cup Cress For garnishing

Equipment

Method

Cooking Instructions
  1. In a mixing bowl, combine BBQ spice mix, liquid smoke salt, and brown sugar. Coat the turkey breast with this rub and let it marinate for 20 minutes.
  2. Preheat your oven to 120°C (248°F) and roast the turkey breast for 2.5 to 3 hours until it reaches an internal temperature of 75°C (165°F). Let it rest for 20 minutes before slicing.
  3. While the turkey rests, split open the buns and fry the bacon until crispy. Preheat another oven to 200°C (392°F) and toast the buns on a baking sheet for 5-7 minutes.
  4. Spread mayonnaise on the inside of each bun. Layer fresh lettuce, tomato, sliced turkey, and camembert on the bottom half.
  5. Return the assembled sandwiches to the oven for 2-3 minutes to melt the camembert slightly. Garnish with cranberries and cress before serving.
