  • 2 cups Char Siu Pork Chopped, any leftover or cooked pork works
  • 2 stalks Green Onions Chopped, use whites and greens
  • 1 tablespoon Ginger Minced, freshly preferred
  • 2 cloves Garlic Minced, fresh preferred
  • 4 cups Leftover Rice Day-old rice best, cooled properly
  • 4 tablespoons XO Sauce Homemade for gluten-free option
  • 2 large Eggs Beaten well for scrambling

Cooking Steps
  1. Heat the oil in a large skillet or wok over high heat until shimmering.
  2. Add diced onion and chopped char siu pork; sauté for 1-2 minutes until onions are translucent.
  3. Stir in white parts of green onions, ginger, and garlic; cook for 30 seconds.
  4. Add leftover rice, breaking clumps; fry for about 2 minutes, stirring frequently.
  5. Pour in XO sauce, stirring to coat rice evenly, and cook for 1-2 minutes.
  6. Push rice to one side and scramble the eggs in the empty side until fully set.
  7. Incorporate green onion tops, stir well, and adjust seasoning with salt if needed.
  8. Serve warm, showcasing the delightful aroma and flavors.
