Preparation Steps
  1. Prepare the meat by tenderizing it until 1/2 inch thick between plastic wrap.
  2. Set up a breading station with flour, beaten eggs, and breadcrumbs in separate shallow bowls.
  3. Coat each piece of tenderized meat in flour, then in eggs, and finally press into breadcrumbs.
  4. Heat oil in a skillet and fry schnitzels for 3-4 minutes per side until golden brown.
  5. Keep fried schnitzels warm in a low oven while preparing the sauce.
  6. In the same skillet, add white wine and scrape brown bits, then stir in mustard and herbs to make the sauce.
  7. Combine schnitzels with the mustard sauce and serve warm.
