  • 4 pieces Eggs fresh, room-temperature for fluffiness
  • to taste Salt
  • to taste Pepper
For the Spinach
  • 2 cups Spinach can substitute with kale or Swiss chard
  • 1 tablespoon Butter or substitute with olive oil or coconut oil
Optional Add-Ins
  • ¼ cup Cheese grated for better melting
  • to taste Chili Flakes optional for spice

Method
 

Preparation
  1. Crack four eggs into a medium bowl, add salt and pepper, and whisk until frothy.
  2. Melt butter in a non-stick skillet over medium-low heat.
  3. Add spinach to the skillet and sauté for about 2 minutes until wilted.
  4. Pour whisked eggs into the skillet, gently stir, and cook for 1-2 minutes until edges are set.
  5. Remove from heat and fold in cheese, let it melt.
  6. Serve immediately, optionally with chili flakes or alongside toast.
