- Crack four eggs into a medium bowl, add salt and pepper, and whisk until frothy.
- Melt butter in a non-stick skillet over medium-low heat.
- Add spinach to the skillet and sauté for about 2 minutes until wilted.
- Pour whisked eggs into the skillet, gently stir, and cook for 1-2 minutes until edges are set.
- Remove from heat and fold in cheese, let it melt.
- Serve immediately, optionally with chili flakes or alongside toast.
