Preparation Steps
- Preheat your oven to 400°F (200°C).
- Melt unsalted butter in a large saucepan over medium heat. Add minced garlic, chopped onion, and chopped celery. Sauté for about 5 minutes until soft and fragrant.
- Stir in flour, cooking for about 1 minute to form a roux.
- Gradually whisk in seafood stock and heavy cream. Cook, stirring frequently, for 5 to 7 minutes until thickened.
- Fold in Old Bay seasoning, salt, black pepper, shrimp, and lobster. Cook for 2 to 3 minutes until shrimp are pink.
- In a mixing bowl, combine flour, baking powder, garlic powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Stir in cheddar cheese and optional fresh herbs. Pour in milk, mixing until just combined.
- Transfer seafood mixture into a baking dish. Drop dollops of biscuit dough on top.
- Bake for 20 to 25 minutes until biscuits are golden brown.
- Let rest for 5 to 10 minutes before serving.
