- Prepare the slow cooker by lightly greasing it with nonstick spray or olive oil.
- Add chicken breasts or thighs in a single layer at the bottom of the slow cooker.
- Whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and black pepper in a mixing bowl until smooth.
- Pour the honey mustard sauce over the chicken, ensuring each piece is coated.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the chicken reaches an internal temperature of 165°F (74°C).
- For a thicker sauce, remove chicken, whisk together cornstarch and water, stir into sauce, and cook on HIGH for an additional 10-15 minutes.
- Return chicken to slow cooker, coat in the thickened sauce, and let soak up flavors for a couple of minutes.
