  2. Divide the mixture into equal portions and shape each into a ¾-inch thick patty, making a shallow indentation in the center to prevent puffing.
  3. Set the smoker to 225°F and add hickory wood chunks. Allow it to come to temperature.
  4. Once ready, arrange the patties on the grates and smoke for 60 to 75 minutes until internal temperature reaches 160°F.
  5. While the patties smoke, whisk together mayonnaise, ketchup, mustard, Worcestershire sauce, sweet relish, crumbled crispy bacon, and Tony's Creole seasoning for the sauce.
  6. In the final minutes of smoking, add slices of pepper jack cheese on top and toast brioche buns for 1-2 minutes.
