Ingredients
  

For the Salad
  • 1 head Romaine Lettuce approximately 6-7 cups chopped
  • 1 can Black Beans 15 oz., rinsed and drained
  • 1 medium Orange Bell Pepper or any color bell pepper
  • 1 pint Grape Tomatoes about 10-12 ounces
  • 2 cups Sweet Corn cooked, frozen or freshly cooked
  • 5 Green Onions chopped
For the Dressing
  • 1 cup Cilantro chopped
  • 2-3 limes Lime Juice freshly squeezed
  • 1 medium Avocado ripe
  • 1 clove Garlic
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Blend the cilantro-lime dressing ingredients until smooth and creamy in a food processor or blender.
  2. Dice the romaine lettuce, chop the orange bell pepper, grape tomatoes, and green onions, and cook the corn if raw.
  3. In a large bowl, combine the chopped ingredients and toss gently.
  4. Pour the desired amount of dressing over the salad and toss gently to coat.
  5. Serve in bowls or on plates, optionally garnishing with cilantro or lime zest.
