  • 1 pound Chicken Thighs boneless, skinless preferred
  • 4 cloves Minced Garlic fresh recommended
  • 1 tablespoon Paprika smoked for richer flavor
  • 0.5 teaspoon Cayenne Pepper adjust to taste

For the Aromatics
  • 2 tablespoons Vegetable Oil or olive oil
  • 1 medium Onion finely chopped
  • 1 medium Red Bell Pepper diced
For the Spices
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Smoked Paprika
For the Sauce
  • 1 can Diced Tomatoes fresh or canned
  • 1 can Coconut Milk dairy-free base
  • 1 cup Chicken Broth low-sodium recommended
  • 1 leaf Bay Leaf remove before serving
For the Garnish
  • 0.25 cup Fresh Cilantro or parsley substitute

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine chicken thighs with minced garlic, paprika, cayenne pepper, salt, and black pepper. Mix well and marinate for at least 30 minutes.
  2. Heat vegetable oil in a large skillet over medium heat. Add onion and red bell pepper, sauté for about 5 minutes until softened.
  3. Add ground cumin, ground coriander, and smoked paprika to the skillet. Cook for 1 minute, stirring continuously.
  4. Add diced tomatoes, coconut milk, and chicken broth to the skillet. Stir and season to taste. Bring to a simmer.
  5. Carefully place marinated chicken thighs into sauce. Reduce heat and simmer for approximately 20 minutes until cooked through.
  6. Remove bay leaf, taste and adjust seasoning, serve hot over rice, garnished with fresh cilantro.
