Ingredients

For the Rice
  • 2 cups Freshly Cooked Japanese Short Grain Rice Best when warm for easy shaping.
For the Filling
  • 1 cup Imitation Crab Can substitute with real crab or other seafood.
  • 3 tablespoons Japanese Mayo Regular mayonnaise can be used.
  • 1 tablespoon Sriracha Adjust quantity based on heat preference.
  • 2 tablespoons Green Onions Chives make a good substitute.
For the Wrap
  • 4 sheets Roasted Seaweed (Nori) Optional for a low-carb option.
  • 1 tablespoon Furikake Optional; substitute with sesame seeds if out.

Equipment

  • Mixing bowl
  • Onigiri Mold

Method

Preparation Steps
  1. Begin by mincing the imitation crab and green onions finely. In a medium bowl, mix together the minced crab, Japanese mayo, Sriracha, and green onions until well combined. Refrigerate the filling for about 15 minutes.
  2. Wet your hands with salt water. Take a handful of warm rice, shape it into a flat disc, create a well in the center, fill with crab mixture, and cover with more rice to form a triangle.
  3. If using a mold, fill the bottom half with rice, press down to create a well, add filling, cover with rice, and compact. Release onto your palm and continue until all filling is used.
  4. Wrap the finished onigiri with a strip of nori and sprinkle with furikake. Arrange on a plate and serve immediately.
