- Start by placing your chocolate truffles in a heat-safe bowl. Melt them in the microwave in 30-second intervals, stirring in between until completely smooth.
- Using a small cookie scoop or your hands, portion out the melted truffle mixture into bite-sized balls, approximately 1 inch in diameter. Place these truffles on a parchment-lined baking sheet.
- While the truffles chill, prepare the white chocolate coating. Melt the white chocolate using the same method, stirring until smooth. Set aside to cool slightly.
- Dip each truffle into the melted white chocolate, allowing any excess to drip off before placing them back on the baking sheet.
- Before the white chocolate sets, decorate each truffle with candy eyes, gently pressing them into the surface.
- For an eerie touch, mix a small amount of red food coloring with melted chocolate, and drizzle this onto the truffles around the candy eyes.
