- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1/4 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
- Add 1/2 cup of cold, unsalted butter, cut into small pieces, to the dry mixture and work it into the flour until it resembles coarse crumbs.
- Pour in 3/4 cup of cold milk and gently stir until just combined.

- Arrange the cut-out shortcakes on the prepared baking sheet and bake for 15 to 20 minutes.
- Allow the shortcakes to cool on a wire rack for about 10 minutes.
- Slice each shortcake in half horizontally, layer with mixed berries and whipped cream, and place the top back on.
