  • 200 ml Heavy Cream Coconut cream for dairy-free version.
  • 1 pinch Salt Balances the sweetness.
  • 30 g Freeze-Dried Strawberry Powder Fresh strawberries can be used but change texture.

Method
 

Directions
  1. Preheat your oven to 240°C (465°F) while preparing the pan with parchment paper.
  2. Blend cream cheese, eggs, sugar, matcha powder, flour, heavy cream, and salt until smooth.
  3. Pour the batter through a fine sieve into your prepared pan and bake for 35 minutes.
  4. Cool at room temperature before refrigerating for at least 2 hours.
  5. Whip together heavy cream, mascarpone, powdered sugar, and strawberry powder until stiff peaks form.
  6. Spread the whipped topping over the cheesecake and garnish as desired.
