- Begin by rinsing the Lacinato kale under cool running water to remove any dirt. Remove the tough stems and tear the leaves into bite-sized pieces. Place the cleaned kale into a large mixing bowl.
- In a separate small bowl, combine the strawberry balsamic vinegar, extra virgin olive oil, and honey. Whisk until well combined and emulsified.
- Pour the dressing over the kale. Massage the dressing into the leaves for about 2-3 minutes to soften the kale.
- Slice the grilled chicken breasts into strips and add to the bowl. Then incorporate the strawberries and blackberries. Crumble the Gorgonzola cheese on top if desired.
- Serve immediately or let it chill in the refrigerator for about 10 minutes before serving.
