Preparation Steps
  1. Begin by rinsing the Lacinato kale under cool running water to remove any dirt. Remove the tough stems and tear the leaves into bite-sized pieces. Place the cleaned kale into a large mixing bowl.
  2. In a separate small bowl, combine the strawberry balsamic vinegar, extra virgin olive oil, and honey. Whisk until well combined and emulsified.
  3. Pour the dressing over the kale. Massage the dressing into the leaves for about 2-3 minutes to soften the kale.
  4. Slice the grilled chicken breasts into strips and add to the bowl. Then incorporate the strawberries and blackberries. Crumble the Gorgonzola cheese on top if desired.
  5. Serve immediately or let it chill in the refrigerator for about 10 minutes before serving.
