Ingredients
  

For the Salmon
  • 1 lb Salmon Fresh or frozen
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 1/4 cup Sweet Chili Sauce Can substitute with honey
  • 2 tbsp Unsalted Butter Can replace with olive oil
  • 2 tbsp Hoisin Sauce Adjust to taste
  • 2 tbsp Fresh Lemon Juice Can use lime juice as well
  • 2 cloves Garlic Minced
For the Pineapple
  • 1 can Pineapple Slices Canned slices are easiest
  • 1/4 cup Fresh Cilantro Substitutable with parsley
  • 2 slices Lime Optional for serving

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and line a baking tray with nonstick aluminum foil.
  2. Place the salmon, skin-side down, on the tray, and season with salt and pepper.
  3. Arrange the pineapple slices beneath the salmon on the tray.
  4. Whisk together sweet chili sauce, melted butter, hoisin sauce, garlic, lemon juice, and reserved pineapple juice in a small bowl.
  5. Pour the sauce evenly over the salmon.
  6. Bake in the preheated oven for about 15 minutes, or until the salmon is opaque and flakes easily.
  7. Garnish with cilantro and serve with lime slices on the side.
