Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40–45 minutes, stirring halfway.
  3. Heat olive oil in a skillet over medium heat. Add diced yellow onion and sauté for 3–4 minutes until translucent.
  4. Add lean ground beef to the skillet. Break it up and stir in taco seasoning, salt, and pepper. Cook for 6–8 minutes until browned.
  5. Assemble the bowls by layering roasted sweet potatoes, followed by seasoned ground beef, creamy avocado slices, and cottage cheese.
  6. Drizzle hot honey over the assembled layers.
  7. Garnish with fresh cilantro, red pepper flakes, or lime juice if desired.
