Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together the marinade ingredients until well combined.
  2. Place chicken breasts in a dish, pour the marinade over, and marinate for at least 30 minutes.
  3. Rinse jasmine rice under cold water. Combine rinsed rice with coconut milk and water in a saucepan.
  4. Bring the rice mixture to a high boil, reduce heat, cover, and simmer for 18–20 minutes.
  5. Preheat your grill or skillet over medium-high heat and oil grates/pan.
  6. Grill the marinated chicken for 6–7 minutes on each side until properly cooked.
  7. After resting, slice the chicken and fluff the coconut rice gently.
  8. Serve coconut rice topped with sliced chicken and garnish with cilantro and lime.
