Step-by-Step Instructions
  1. Begin by trimming any excess fat from the chicken. Lightly season the chicken pieces with salt and pepper.
  2. Place your seasoned chicken in the bottom of the slow cooker, ensuring even cooking.
  3. In a separate bowl, whisk together pineapple juice, soy sauce, brown sugar, and minced garlic. Add ground ginger if desired.
  4. Pour the prepared sauce over the chicken, and add drained pineapple chunks and sliced red bell pepper on top.
  5. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is fork-tender.
  6. Remove the chicken once cooked. Mix cornstarch with cold water, then stir into the sauce to thicken.
