Ingredients

For the Quesadillas
  • 4 pieces Flour Tortillas Choose soft, pliable ones to avoid tears.
  • 2 pieces Ripe Peaches Opt for slightly soft peaches for sweetness.
  • 1 cups Shredded Sharp Cheddar Cheese Offers a bold, savory flavor.
  • 0.5 cups Crumbled Goat Cheese Adds a creamy texture and tanginess.
  • 2 tablespoons Honey Using local, raw honey will elevate your dish.
  • 1 teaspoon Cinnamon Brings warmth and aroma.
  • 2 tablespoons Butter For grilling, to achieve golden-brown exterior.
  • 0.5 cups Fresh Mint Leaves Optional garnish for color and aroma.

Equipment

  • Skillet
  • Mixing bowl
  • Spatula

Method

Step-by-Step Instructions
  1. Wash two ripe peaches gently under cool water. Slice them into wedges and remove the pits. In a mixing bowl, coat the peach slices with honey and sprinkle with cinnamon. Let this mixture sit while you prepare the tortillas.
  2. Take a flour tortilla and layer half of the shredded sharp cheddar cheese over one half, followed by half of the peach mixture and crumbled goat cheese. Fold the tortilla in half to create a half-moon shape.
  3. In a skillet, add a tablespoon of butter and heat over medium heat until it melts. Ensure the butter coats the bottom of the skillet evenly.
  4. Place the folded quesadilla in the skillet and cook for 3-4 minutes until golden brown and crispy. Use a spatula to flip it over and repeat the grilling process.
  5. Remove the quesadilla from the skillet, let it cool for a minute, then slice into wedges. Garnish with fresh mint leaves before serving.
