Preparation
- In a medium saucepan over medium heat, combine tamarind paste with water. Bring to a gentle boil and let it thicken for 3-5 minutes. Remove from heat and let it cool.
- Stir in chopped shallots, green chili, cilantro, and brown sugar into the cooled tamarind mixture. Optionally, add ground cumin. Allow to rest for at least 10 minutes.
- In a bowl, combine tamarind paste, diced fresh tomato, chopped shallots, chopped mint or cilantro, and green chili. Mash gently to a chunky consistency and let sit for 5 minutes.
- In a small saucepan, mix tamarind paste and water, heating on low for 3-4 minutes. Dissolve corn starch in cold water, mix into the tamarind sauce, and cook for 2-3 minutes until thickened.
- Remove from heat and fold in green onions, cilantro, brown sugar, and toasted sesame oil. Top with sesame seeds and stir well.
