Ingredients
  

Simple Sauce
  • 1/4 cup tamarind paste can substitute with pomegranate molasses
  • 1/2 cup water adjust for consistency
  • 2 tablespoons chopped shallots
  • 1 piece green chilies adjust based on heat preference
  • 2 tablespoons chopped cilantro feel free to substitute with mint
  • 1 tablespoon brown sugar add to taste
  • 1/2 teaspoon ground cumin optional
Salsa Style
  • 1/4 cup tamarind paste
  • 1 piece fresh tomato diced
  • 2 tablespoons chopped shallots
  • 2 tablespoons chopped mint or cilantro
  • 1 pinch cayenne pepper to taste
Asian Style Dip
  • 1/4 cup tamarind paste
  • 1/2 cup water
  • 1 tablespoon corn starch dissolved in 2 tablespoons of cold water
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons chopped green onions can be omitted
  • 1 tablespoon sesame seeds for texture

Method
 

Preparation
  1. In a medium saucepan over medium heat, combine tamarind paste with water. Bring to a gentle boil and let it thicken for 3-5 minutes. Remove from heat and let it cool.
  2. Stir in chopped shallots, green chili, cilantro, and brown sugar into the cooled tamarind mixture. Optionally, add ground cumin. Allow to rest for at least 10 minutes.
  3. In a bowl, combine tamarind paste, diced fresh tomato, chopped shallots, chopped mint or cilantro, and green chili. Mash gently to a chunky consistency and let sit for 5 minutes.
  4. In a small saucepan, mix tamarind paste and water, heating on low for 3-4 minutes. Dissolve corn starch in cold water, mix into the tamarind sauce, and cook for 2-3 minutes until thickened.
  5. Remove from heat and fold in green onions, cilantro, brown sugar, and toasted sesame oil. Top with sesame seeds and stir well.
