Preparation
- Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- Combine 1 cup of softened butter and 1 cup of granulated sugar in a mixing bowl and beat until light and fluffy.
- Add 1 large egg, 3 tablespoons of lemon juice, and 1 tablespoon of lemon zest, and mix until just combined.
- Gradually add 2⅓ cups of all-purpose flour and ¼ teaspoon of baking soda, stirring until just combined.
- Gently fold in 1¼ cups of diced fresh strawberries.
- Pour the batter into the baking pan and bake for 45-50 minutes, checking for doneness.
- While baking, whisk together 1½ cups of powdered sugar, 2 tablespoons of lemon juice, and 1 tablespoon of strawberry jam for the glaze.
- Once baked, cool the blondies in the pan for 10-15 minutes, then transfer to a wire rack, glaze, and let set.
