Ingredients
  

For the Chicken
  • 1 pound Boneless Chicken Breast Can use leftover grilled chicken.
  • 2 tablespoons Soy Sauce Use tamari for gluten-free.
  • 1 tablespoon Sesame Oil Replace with olive or avocado oil if needed.
For the Peanut Sauce
  • 1/2 cup Creamy Peanut Butter Can substitute with almond butter, sunflower seed butter, or tahini.
  • 2 tablespoons Lime Juice Vinegar can be used as an alternative.
  • 2 cloves Garlic Fresh is preferable, but garlic powder can be used.
  • 1 tablespoon Fresh Ginger Can replace with ground ginger.
  • 1 tablespoon Honey Adjust sweetness as needed.
For the Wraps
  • 4 large Flour Tortillas Can substitute with whole wheat, spinach wraps, or lettuce leaves.
  • 1 cup Fresh Lettuce Leaves Any leafy greens can be used.
  • 1 cup Purple Cabbage Green cabbage is an acceptable substitute.
  • 1 cup Carrots Julienne or grate for easy layering.
  • 1/4 cup Fresh Cilantro Omit if cilantro isn’t preferred.

Method
 

Peanut Sauce Preparation
  1. In a medium bowl, whisk together creamy peanut butter, soy sauce, sesame oil, lime juice, minced garlic, grated ginger, and honey until smooth.
  2. Adjust sweetness as desired before setting it aside.
Chicken Preparation
  1. Cut boneless chicken breasts into thin strips and combine with soy sauce and sesame oil in a bowl.
  2. Allow to marinate for about 10 minutes.
Vegetable Preparation
  1. Wash and dry fresh lettuce, shred purple cabbage, and julienne or grate the carrots.
  2. Finely chop the cilantro.
Cooking Chicken
  1. Heat a skillet over medium-high heat and add marinated chicken strips.
  2. Cook for about 6-8 minutes until fully cooked.
Wrap Assembly
  1. Warm tortillas in the skillet, spread peanut sauce, add vegetables and chicken, then sprinkle with cilantro.
Serving
  1. Roll tortillas tightly around the fillings, cut in half, and serve with extra peanut sauce.
