Ingredients
  

For the Chicken
  • 1 pound chicken breast sliced
  • 2 tablespoons soy sauce low-sodium
  • 1 tablespoon sesame oil
For the Wraps
  • 4 pieces flour tortillas whole wheat or spinach optional
  • 1 cup fresh lettuce leaves iceberg or romaine
  • 1 cup purple cabbage shredded
  • 1 medium carrot julienned
For the Peanut Sauce
  • 1/2 cup creamy peanut butter can substitute almond butter or tahini
  • 1 lime lime juice to taste
  • 1 clove garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 tablespoon honey to taste

Method
 

Peanut Sauce Preparation
  1. In a medium bowl, whisk together peanut butter, soy sauce, sesame oil, and lime juice until smooth. Add garlic, ginger, and honey, stirring until well combined.
Chicken Marination
  1. In a large bowl, combine sliced chicken breast with soy sauce and sesame oil. Toss until well coated and marinate for about 10 minutes.
Vegetable Preparation
  1. Wash and dry fresh vegetables. Shred purple cabbage and julienne carrot. Prepare vegetables for assembling wraps.
Cooking Chicken
  1. Heat a skillet over medium-high heat and add the marinated chicken strips. Cook for 6-8 minutes until cooked through. Remove and let cool slightly.
Warming Tortillas
  1. Lightly warm tortillas on a skillet for about 30 seconds on each side until soft and pliable.
Wrap Assembly
  1. Lay a warm tortilla flat, spread peanut sauce, add lettuce, cabbage, carrots, and chicken. Top with cilantro.
Serving
  1. Roll the tortilla tightly, tucking in the sides. Cut in half diagonally and serve with extra peanut sauce.
