  2. In a medium saucepan, combine the rinsed jasmine rice, full-fat coconut milk, water, and salt. Stir gently to incorporate.
  3. Place the saucepan over medium heat and bring the mixture to a rolling boil. Stir once to prevent sticking.
  4. Reduce heat to low, cover the saucepan, and allow it to simmer for 15–18 minutes until liquid is absorbed.
  5. Turn off the heat and keep the saucepan covered for an additional 5 minutes.
  6. Fluff the rice with a fork and fold in the pineapple chunks and lime juice.
  7. Top with toasted coconut and chopped cilantro for garnish. Serve warm.
