Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Bake the potatoes for approximately 1 hour until soft.
  3. Allow potatoes to cool for 10-15 minutes, then cut in half and scoop out the insides.
  4. Rub empty potato skins with olive oil and season with salt, placing them cut-side up on the prepared baking sheet.
  5. Mix scooped potato flesh with butter, Greek yogurt, buttermilk, and seasonings, then fold in broccoli and cheddar.
  6. Spoon filling back into potato skins and sprinkle with remaining cheddar cheese.
  7. Bake again for 20-25 minutes until bubbly and golden.
  8. Allow to cool slightly before serving.
