Step-by-Step Instructions
  1. In a medium bowl, whisk together 3 tablespoons of apple cider vinegar, 1/4 cup of extra-virgin olive oil, 1 tablespoon of honey, and a pinch of salt and pepper. Whisk until emulsified and smooth, about 1-2 minutes.
  2. In a large mixing bowl, combine 4 cups of mixed leafy greens with 1 to 2 sliced apples. Add 1/2 cup of toasted walnuts or pecans and 1/2 cup of crumbled feta cheese. Toss gently.
  3. Pour the prepared vinaigrette over the salad and gently toss for about 30 seconds until all ingredients are lightly coated.
