  • 1 pound peeled and deveined shrimp use fresh or high-quality frozen
  • 1 large English cucumber diced
  • 3 green onions sliced
  • 2 tablespoons fresh dill chopped
For the Creamy Lime Dressing
  • 1/2 cup mayonnaise or Greek yogurt
  • 1/4 cup sour cream or Greek yogurt
  • 1 large lime zest and juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • to taste kosher salt
  • to taste freshly cracked pepper
For Serving
  • 1 cup fresh greens mixed baby greens or arugula
  • to taste extra dill for garnish
  • to taste lime wedges for garnish

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine mayonnaise, sour cream, lime zest and juice, chopped dill, Dijon mustard, and minced garlic. Season with kosher salt and pepper. Whisk until smooth and set aside.
  2. Bring a pot of salted water to a rolling boil. Add shrimp and cook for 2-3 minutes or until pink and opaque. Transfer to an ice bath for 3 minutes.
  3. While shrimp cools, dice cucumber and slice green onions. In a large mixing bowl, add cucumber and green onions.
  4. Once shrimp are cooled, gently toss them with cucumber, green onions, and creamy dressing in the large bowl.
  5. Serve by arranging fresh greens on plates or bowls. Spoon the shrimp mixture over greens and garnish with dill or lime wedges.
