  1. Finely chop the long red chili and garlic. Add chopped coriander. Prepare in about 5 minutes.
  2. Combine chopped chili, garlic, coriander, chili flakes, lime juice, and sugar in a bowl. Takes around 3 minutes.
  3. Pour in fish sauce and stir or shake to combine. Mixing will take about 2 minutes.
  4. Taste and adjust for sweetness or heat. This step will take 1-2 minutes.
  5. Transfer to an airtight container for storage, or use immediately. Takes about 1 minute.
