  • 2 cups Zucchini Shredded, salted, and drained

  • 1 cup Mushrooms Fresh, canned, or rehydrated dried
  • 1 teaspoon Dried Oregano Can substitute with fresh oregano
  • 1 teaspoon Garlic Powder Or fresh minced garlic
  • 1/2 teaspoon Black Pepper To taste
For the Topping
  • 1 cup Mozzarella Cheese Can use low-fat
  • 1/2 cup Cheddar Cheese Or vegan cheese alternative

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C). Prepare the zucchini and other ingredients.
  2. Sprinkle shredded zucchini with salt and let it rest in a colander for about 10 minutes.
  3. Wrap the zucchini in a clean kitchen towel and squeeze gently to remove excess moisture.
  4. Combine the drained zucchini with eggs, Parmesan cheese, and half of the mozzarella cheese in a mixing bowl.
  5. Grease a 9x13-inch baking dish and press the zucchini mixture evenly into the bottom.
  6. Bake the crust for 20 minutes until lightly golden.
  7. In a skillet, cook ground beef and onions over medium-high heat until the beef is browned.
  8. Stir in pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper. Simmer for 5 minutes.
  9. Spread the meat mixture over the baked zucchini crust.
  10. Top with remaining mozzarella and cheddar cheese.
  11. Bake for another 20 minutes until the cheese is melted and golden brown.
  12. Let cool for a few minutes, slice, and serve warm.
